Pancetta Wrapped Asparagus with Garlic Butter King Oyster Mushrooms

A savoury and simple recipe with asparagus and mushrooms.

This dish is so simple to make and is delightfully delicious. All it takes is a skillet or frying pan and a few simple ingredients. If you like bacon, then you’ll like pancetta. One of my favourite types of mushrooms is the King Oyster mushroom and they taste great with a little butter and garlic.

Ingredients:

  • Asparagus
  • Pancetta
  • King Oyster Mushrooms
  • 1 tbsp of minced garlic
  • 1 tbsp of olive oil
  • 1 tbsp of butter
  • 2 tbsp of water

Directions:

  1. Pre-heat frying pan or skillet on medium heat
  2. Add olive oil to pan
  3. Wash asparagus and trim the bottom of the stalks
  4. Wrap a slice of pancetta around each stalk of asparagus
  5. Pan fry the asparagus wrapped with pancetta and turn occasionally until the pancetta is crispy and cooked (approximately 5 minutes)
  6. Place on serving plate after cooking
  7. Wash and slice the mushrooms
  8. Add butter to the frying pan or skillet add the King Oyster mushrooms
  9. Add the 2 tbsps of water to the pan and flip King Oyster mushrooms occasionally over 2 minutes
  10. Add the minced garlic and cook the mushrooms for another 2-3 minutes (flip occasionally)
  11. Serve with pancetta wrapped asparagus and enjoy
